Sicilian Square Pizza

Ingredients:

  • 3 1/2 cups bread flour
  • 1 1/2 tsp instant yeast
  • 1 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 1/2 cups warm water
  • 1 can (28 oz) whole peeled tomatoes
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and black pepper
  • 1 lb shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. In a large bowl, combine the bread flour, instant yeast, and salt.
  2. Add the olive oil and warm water, and mix until a shaggy dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes, until it becomes smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for about an hour, until it doubles in size.
  5. Preheat the oven to 450°F.
  6. Drain the tomatoes and crush them with your hands in a bowl.
  7. In a saucepan, heat the olive oil and garlic over medium heat until fragrant.
  8. Add the crushed tomatoes, oregano, red pepper flakes, salt, and black pepper to the saucepan, and let it simmer for 10-15 minutes, until the sauce thickens.
  9. Roll out the dough into a rectangle shape that will fit a 9x13 inch baking pan.
  10. Grease the pan with olive oil and transfer the dough to the pan, pressing it down evenly.
  11. Add the shredded mozzarella cheese on top of the dough, followed by the tomato sauce and grated Parmesan cheese.
  12. Bake the pizza for 20-25 minutes, until the crust is golden brown and the cheese is melted and bubbly.
  13. Let the pizza cool for a few minutes before slicing and serving.
